feat(market): add eth chain support for trenches

Browse Source 
- Add eth to TRENCHES_PLATFORMS and TRENCHES_QUOTE_ADDRESS_TYPES
- Allow --chain eth for market trenches
- Document eth platforms in CLI help, SKILL.md, and cli-usage.md
